It will not work with the 105 derailleur. The pull ratios are different for road and MTN. The new GRX stuff gives a wide range derailleur cage compatible with road groupsets

The Shimano Deore 10-speed shifters will not work with Shimano road components because the cable pull is different.
If you are setting up a flat bar road bike Shimano does make the Tiagra 4600 flat bar shifter pods which will work with a 10-speed Ultegra rear derailleur.
